Disable the remap to vector(color) and color random then color it from the base properties. You can actually color it without disabling remap using lua code... you can try that it works by changing the cp15 0 0 0 value to the desired color(you can see that settingson the top right side of the particle editor) but that's only temporary so lua codng is better, however, changing it from the base properties is fine and easy.
